By the time dinner rolled around, Bistro Collins became one of my favorite spots. Their dishes have this elevated coastal flair — fresh, vibrant, perfectly seasoned. The shrimp were particularly unforgettable: plump, juicy, and delicately spiced. I kept thinking, “How is everything here THIS good?”
We followed Diego’s recommendations to the letter — and he was right every single time. We started with the steak tartare, hands down the best I have ever had in my life: perfectly seasoned, silky, and impossibly fresh. The shrimp left me speechless — plump, sweet, subtly smoky, and cooked with the kind of precision only a chef who truly cares can deliver.
For entrées, the salmon with lentils was a revelation: crisp skin, tender inside, and resting on earthy lentils that soaked up every drop of flavor. The gnocchi ragù arrived as pure comfort — pillowy, rich, and layered with depth. And the beef with onions was slow-cooked perfection, melt-in-your-mouth tender with a sweetness from the onions that tied it all together.
We added mushrooms and fries on the side — simple, classic, and flawless. And to finish, a chocolate cake with coffee ice cream, the kind of dessert that forces you to take a moment of silence because it’s just that good.
The entire meal was simply unforgettable — elevated yet comforting, refined but soulful. Diego truly curated the perfect experience.
And then there’s the Sushi Bar — honestly, a hidden gem inside the hotel.
Right next to the bar is the hotel’s sushi counter — an unexpected gem that completely exceeded every expectation. We started with the rice cracker and tuna crisp, which was so insanely good it actually stopped the conversation. The hamachi tostadas were another wow moment — light, bright, citrusy, and perfectly balanced.
Then came the nigiri, and honestly, each piece was a masterpiece on its own.
The shrimp nigiri was sweet and delicate, the kind of freshness you rarely find. The shima aji was out-of-this-world — buttery, clean, and unforgettable. The salmon nigiri was omg levels of delicious, and the tuna was rich, smooth, and absolutely perfect.
For rolls, the selection was next-level.
The Collins Roll was incredible — bold, flavorful, beautifully crafted. The Citrus Roll was unique and honestly speechless-worthy, a bright explosion of flavors that felt both refreshing and luxurious. And the Rainbow Roll… wawwww. Colorful, fresh, and executed with such finesse that it might be one of the best I’ve ever tasted.
Chef Khaleel Ali is a master. His sushi is elegant, precise, and insanely fresh. You can taste the technique, the training, and the pride in every bite. I truly didn’t expect to find sushi this refined inside a beach resort, but here we are — Loews exceeded every expectation.

Being steps away from one of the most impossible-to-book restaurants in America — Rao’s — was such a power move. In New York, people wait months for a reservation. In Miami, guests fly in just to get a table. Being that close to one of the world’s most exclusive dining experiences adds such a glamorous touch to the stay.
For apps, we loved the meatballs (a rich blend of turkey and beef), the baked clams, and the seafood salad — honestly, a must. For entrées, the veal parm “bone-cut” was indulgent, the penne alla vodka delightfully creamy and nostalgic, and the side of mushrooms added that homely touch. And don’t sleep on dessert — the peanut butter cake was unexpectedly comforting and decadent, a perfect sweet finish to an iconic Italian feast.
Private Cabanas: Living the True Oceanfront Fantasy
